Quick hummus recipe
400g tin of chickpeas (drained and rinsed)
60ml fresh lemon juice
1 garlic clove
2 tbsp olive oil
½ tsp ground cumin
3 tbsp water
Put all the ingredients in a food processor and process for 5 minutes. Make sure that you keep scraping the sides of the bowl to make sure the chickpeas are well mixed.
If your hummus is too thick add another tablespoon of water to the food processor.
If you don't have a food processor a stick mixer works just as well.
Keep in an airtight container and the hummus will keep in the fridge for about a week.
