Chocolate and coconut milk ice-cream

A really nice, easy and tasty! Ice cream recipe also fructose free!

400ml can of full fat coconut milk

40g raw cacao powder (1/3 cup)

4 tbsp rice malt syrup.

  • Mix all the ingredients together, if possible use a blender.
  • When it is smooth (approx 1 minute) pour it into a freezer proof container.
  • Pop the container in the fridge for about 4/5 hours and then it should be ready to eat.
  • If it is too hard when you get it out then allow it to thaw a bit before serving.
