Choc o Muggins

Choc-o-muggins.

 

A good idea for breakfast and if you want to make it at work it can be pre mixed with the milk before you set off to make it easier.

If you are a vegan it could be served as a dessert with some vegan ice cream.

 

Ingredients

¼ cup (25g) self raising flour

2 tablespoons desiccated coconut

1 tablespoon raw cacao powder

¼ teaspoon granulated stevia (optional)

¼ cup (60ml) coconut milk (can use other milks, coconut gives the sweetest taste)

To serve

Greek style plain yoghurt.

 

Method

Put all the dry ingredients in a microwave safe mug and mix thoroughly.

Pour in the coconut milk and mix thoroughly making sure you don’t leave any dry bits at the bottom.

Microwave on high for 90 seconds.

Serve with yoghurt.
